The Food Safety Modernization Act highlights sanitation practices and environmental monitoring as key elements in an effective food safety plan. Monitoring for environmental pathogens, such as Listeria monocytogenes, Salmonella, and their hygienic indicators can be an effective tool to reduce the risk of contamination in a food processing environment.

Join us for this one-day workshop designed to provide training with two objectives:

  1. A foundational overview of key food safety preventive measures; and
  2. Detailed insight into developing an effective environmental monitoring program.

Objective One investigates pre-requisite programs and considers their unique components and implementation including documentation and corrective actions.

  • Preventive maintenance
  • Hygienic Zoning
  • Ingredients and raw materials
  • Sanitation procedures

Objective Two investigates environmental monitoring verification procedures that assess if pre-requisite programs are working as intended.

Participants will have the opportunity to apply knowledge through scenario examples and hands-on activities, learning:

  • Identification of hygienic & surface zones and evaluate sanitary facility & equipment design
  • Understand the uses of ATP, indicator microorganisms and pathogen sampling including: when, where and how to sample
  • Proper documentation and management of a Sampling Program
  • Establishing Corrective Actions and the true costs associated with implementing & maintaining a Sampling Program

Participants will receive training materials, digital templates & resources and a Certificate of Training & Completion.
